Caught the Sunday blues stressing about the upcoming work week? Save this recipe for an easy brown-bag lunch. The Healthy Maven’s buffalo chicken salad makes for one heckuva sandwich filling–spicy, tangy and full of protein-packed chicken breast. Save time by using leftover chicken or store-bought rotisserie chicken.
Buffalo Chicken Salad Sandwich
Ingredients
- 2 chicken breasts (8 ounces), cooked and shredded
- 2 stalks of celery, chopped
- 2 green onions (whites and light green only), chopped
- 2 tablespoons hot sauce (certified gluten-free if necessary)
- 1 tablespoon butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 lemon, juiced
- salt and pepper, to taste
- 8 slices whole wheat bread
Directions
Combine chicken, celery and onion in a large bowl. In a separate bowl combine all other ingredients. Add wet ingredients to chicken and mix well.
Serve atop bread or celery.
Will keep for several days in an airtight container in the fridge.
